Amylase is a digestive enzyme that splits complex carbohydrates into simple sugars. The supplement form comes from the fungus *Aspergillus oryzae*, which withstands stomach acid better than the body's own pancreatic amylase. Taking it with carbohydrate meals helps break down starches more completely.
People take amylase to relieve bloating, gas, or discomfort after eating starchy foods. Others use it when the pancreas does not produce enough enzymes. You can take it alone or in a multi-enzyme blend, right before or during a meal.
